Mmm... what's that delicious smell? As I walk past the street-hawker food-stalls at the Long House Hawker Centre at Singapore's Upper Thomson Road, an enticing aroma drifts past my nostrils. Coriander, cumin, garlic, lemon grass, cinnamon, seafood, sweet and sour sauce -- all suggest, "come and try the food at my stall. I know what I am doing".
In many other parts of the world, eating at a roadside food stall is a sure-fire shortcut to ptomaine poisoning. Not likely in Singapore -- no matter how basic the equipment, you can be sure that government inspectors regularly check every stall to ensure that everything is hygienic, and that the ingredients used are of acceptable quality.
