Dining With A Difference Series - The History Restaurant, India

Cochin, India, where many of the European explorers - followed by traders from other parts of the world -- first landed, is a melting pot of many cultures including the Dutch, Portuguese, British, Arab and Jewish. Each added their influences to local dishes.

Chef Sunitha Divakarsan of aptly named 'The History Restaurant' of The Brunton Boatyard Hotel in Cochin, has carefully researched this, subsequently compiling a menu which showcases some of the favourite dishes incorporating these early influences into the most loved examples of the local Indian culinary tradition. To quote from the menu, "… We have made a sincere effort in recreating the harmonious culinary era that existed here decades ago…"

The Dining With a Difference series is written by Cherie Glaser, and features restaurants that are particularly distinctive, but not just on a culinary basis.
