| While visiting the Bordeaux region of France, we met Dr Alan Jones, one of the world’s leading authorities on fish farming, who is in charge of an amazing French project to breed Siberian Sturgeon for caviar and fish-meat. With Caspian caviar production on such a steep decline, the fact that Dr Jones’ organisation is already on the way to producing two tonnes of caviar in 2000 and targeting five tonnes per annum shortly after that, is good news for the world’s gourmets. And, as we found to our delight, the French caviar loses nothing in flavour and is of a superb quality which we have recently found lacking in much of the Russian caviar. |
